I enjoyed the series 'Hannibal' - Will Graham one of the shows protagonists plays a profiler with a unique gift for empathy. Unfortunately it is this same empathy which disturbs him since it is almost impossible to cut himself from the criminal he is pursuing.
MindHunter is another great series along with the old UK series Wire in the blood.
As for movies I'm not that aware of many I have enjoyed. But The Bone Collector is a good movie based from the book and starring Denziel Washington.
